तमाम तरह के खाद्यों में सबसे ज्यादा खामियाज़ा यदि जलवायु को किसी खाद्य से उठाना 

पड़ता है तो वह खाद्य है गौ मांस। यहां हम भगवद्गीता  में वर्णित तीन तरह के 

खाद्यों सतो -रजो -तमो गुणों से संसिक्त (सात्विक -राजसिक -तामसिक 

)भोजन की नहीं कर रहें हैं। 

जलवायु को होने वालो नुकसानी के आधार पर हम अपनी बात अधुनातन शोध के आलोक में कह रहें हैं। 
उत्तरी अमरीका में उपभोग्य खाद्यों से ताल्लुक रखने वाली प्राकृत संसाधन प्रतिरक्षा परिषद् (Natural Resources Defense Council On Food Consumption ,NRDC)ने २०१७ में जो अध्ययन संपन्न किया था उसके मुताबिक़ प्रति  किलोग्रेम गौमांस की उपलब्धि के पीछे २६. ५ (साढ़े छब्बीस किलोग्रेम वेट )ग्रीनहाउस गैस कार्बन डाइआक्साइड हमारी हवा में  में दाखिल हो जाती है।यह उत्सर्जन प्रतिकिलोग्रेम वेट चिकन और टर्की की उपलब्धि पर  उत्सर्जित गैस से पांच गुना ज्यादा है। 

खाद्य एवं कृषि संघ (संयुक्त राष्ट्र )के अनुसार भूमंडलीय स्तर पर होने वाले कुल ग्रीनहाउस गैस  उत्सर्जन में पशु कृषि की भागीदारी  १४. ५ फीसद बनी हुई है।इस उत्सर्जन का भी ६५ फीसद हिस्सा गौ मांस (Beef )डेरी कैटल  (दुग्ध मुहैया करवाने वाले अन्य मवेशी )से हमारी हवा में घुल रहा है । 

बात साफ़ है यदि  दुनिया भर में गौ मांस की खपत को नियंत्रित किया जाए समय की मांग के अनुरूप कमतर रखा जाए तो ग्लोबी स्तर पर होने वाले कुल  उत्सर्जन को खासा कम किया जा सकता है। कुछ संतोष का यह ज़रूर विषय है कि २००५ की खपत की तुलना में अमरीका में गौमांस की खपत में आज १९ फीसद कमी आई है। ऐसा करने से हमारी हवा में दाखिल होने वाले  उत्सर्जन में अठारह करोड़ पचास लाख मीटरी  टन के तुल्य कमी आई है। तीन करोड़ नब्बे लाख कारों के टेल पाइपों से इतना ही उत्सर्जन होता है। 

गौ मांस के उत्पादन में एक बड़ी खराबी और है वह यह कि गौ चारा (cow feed )पैदा करने में अतिरिक्त नाशजीवों और कीटनाशियों ,कृमिनाशियों की दरकार रहती है।इन कृषि  रसायनों को तैयार करने में भी अतिरिक्त ईंधन खर्च होता है। 
इसके अलावा गौ का पाचन तंत्र मीथेन गैस  पैदा करता है जो कार्बन -डाइआक्साइड  से २५ गुना ज्यादा असरकारी (विनाशक ,पोटेंट ) ग्रीन हाउस गैस है। मीथेन से अपेक्षाकृत ग्लोबल वार्मिंग ज्यादा होती है।
